I created these Peanut Butter and Jelly Cupcakes for my son who loves these two ingredients. I wanted to surprise him with this peanut butter dessert.
Making these are pretty simple. I just purchased a white cake mix and followed the ingredients to make cupcakes on the box.
Once the cupcakes were cooled, I added my jalapeno plum jam recipe to the center. You don’t need to make jelly from scratch, you can use store bought jelly which works just as well.
To add the jelly to the center of the cupcake, you’ll need a cupcake nozzle or better yet a decorating kit. If you don’t have one, this decorating kit has all the tools you’ll need for less than 10 bucks.
I’m sorry that I don’t have photos of me inserting the jelly into the center of the cupcakes, I actually needed two hands to do that.
What you want to do is take your cupcake nozzle and insert it directly in the center. Go about 3/4 the way down and insert about 1 Tbsp of jelly. Be sure you don’t hit the bottom of the cupcake. If you hit the bottom of the cupcake, once you take off the paper wrapper your jelly will start to fall out. Don’t worry if you make that mistake, just go ahead and eat that one and no one will know. I won’t tell. =)
The peanut butter frosting is easy to make too. Check out my peanut butter frosting recipe and add that to the top. I used the star tip to decorate my frosting which should be included in your decorating kit.
