Birthday Fruit Cake? Yup, you heard me right! I wanted to take a different approach in making a healthier version of a birthday cake for my husband’s birthday. Cake is such a nice treat, but the calories that come along with it doesn’t always sit well with us. I looked into purchasing one, but the cost was very pricey and didn’t fit our budget. I decided to make him a Birthday Fruit Cake instead.
First, I took out a ruler and measured about 3 inches from the center. I placed toothpicks to mark the 3 inches on the top and from the bottom.
Then toothpicks are used as a guide to cut an even line. I went ahead and cut as close to the toothpicks as possible.
Then I flipped the remaining side over and cut the remaining portion and set the 3 inch portion on a plate.
I repeated the process with my Honeydew Melon. I cut it first, then removed the seeds.
Then I placed on top of the watermelon. You can use skewers to hold it in place, I didn’t because we weren’t really transporting the birthday fruit cake anywhere.
After cutting the Honeydew Melon, I repeated the process with my Cantaloupe.
I wanted to give my birthday fruit cake a little more decoration, so I trimmed the bottom of my cake with grapes.
Then trimmed the other layer with blueberries.
I wanted to cover the open part of the melon at the top, so I used Strawberries and kept them whole. I used toothpicks so I could place them in areas without worrying about them falling.
I wanted to add some “candles” so I threw blueberries over the toothpicks and placed them at the top of the birthday fruit cake and this was the overall look.
It even looked beautiful from the top!
This birthday fruit cake was really simple to do. After the candles were blown out, we cut the “cake” placed all the fruit in a bowl and it was so delicious not to mention healthy. So if you are looking for something healthier, this is great alternative to cake.
